Vinification: The grapes are handpicked. ln the Winery they are cooled down, maceration on skins for one hour before pressing (40-50 liters of juice per 100 kg of fruit) and then the juice is being fermented dry in temperature controlled tanks. Here the Pinot Noir stays to mature until May after harvest, then is bottled for the second fermentation.
